Pressed off into tank to allow settling before being transferred off lees and put through a relatively warm ferment between 15-17 degrees Celsius. After roughly ¾ of the way through primary ferment the wine was given a gentle lees stir and transferred straight into a pressurized bottles and sealed where it was allowed to finish the remainder for the fermentation and then laid down for 3 years.
