For the Oude Geuze, young lambic, matured for at least one year, and old lambic, matured for at least two years, are mixed according to the taste of the Gueuze blender. Once in the bottle, the last ripening phase follows. The result is a spontaneous fermentation beer with a typical taste and a nice foam head. This gueuze is also described as quite dry, bitter and relatively less acidic.
