Sholto Pinot Noir Pet Nat

A Pétillant Naturel style of sparkling wine sourced from Poachers Pantry. 100% Pinot Noir machine harvested very early in the morning and given short time on skins to give a fresh salmon colour. Pressed off into tank to allow settling before being transferred off lees and put through a relatively warm ferment between 15-17 degrees Celsius. After roughly ¾ of the way through primary ferment the wine was given a gentle lees stir and transferred straight into a pressurized bottles and sealed where it was allowed to finish the remainder for the fermentation and then laid down for 3 years. As a PetNat style it can be unpredictable at times on opening so please chill and open slowly.
