Lepette Apple Cider

Absolutely gorgeous, the apples were harvested in 2015, crushed into french oak for a wild ferment, aged for 5 months before transferred to bottle where it (quite luckily was forgotten about in the cellar) aged for ~7 years on the lees, it was recently found and disgorged and refermented. On the palate, there's some bright apple with a touch of funk and acidity from that wild ferment, a beautiful cream & buttery note from the extended aging on lees, remarkably bright & fresh in the palate with a lingering finish. An absolutely superb pick for anyone who likes their cider.
