King Valley fruit. Fermented using indigenous yeasts on active Chardonnay lees. 30% in seasoned French oak barriques, 70% in stainless steel. Kept on lees for 9 months, then blended before bottling.
No fining. Textural yet clean, sea spray and walnut oil warmth. As with all our wines, we like a ‘handmade’ expression about them. Nothing too polished but not lacking in class. Drink with some pungent cheese and unseasoned flat breads.
