A sparkling Australian Wild Ale made with organic malted schooner barley (AU), organic black patent malt (AU), organic raw sugar (AU) and Pride of Ringwood hops (AU). Fermented and aged in a single 500 l puncheon before bottling, conditioning and maturation for four months before release. Expect familiar Austra-Belgo hop aromatics, with a phenolic sweet/spiciness from the fermentation. The palate flows beautifully, full, fruity and with a clean bitter finish. This is not the last time we will give this a whirl.
